Summer Activities

I have been meaning to post these for a while. Not only are we finishing our basement, which should be complete sometime mid-July, we have been busy planting an apple tree, and a peach tree in our backyard, planting a garden (which I don't have a picture of, but will post one later), and doing some domestic canning.

Yes, you heard right. I canned some chicken all by myself (ok, with the help of my awesome friend Lindsey). I now have 24 jars of boneless skinless chicken breast to add to our food storage. It was pretty fun, but unless you buy the chicken at a way good deal and already have your jars, it actually costs about the same or a little more to do this than to buy canned chicken at the store. But it was fun anyway.
Oh, yes, did I mention we have a new addition to the family? A little girl just about Jackson's age. They look very much alike too!

You have a beautiful home! I am totally jealous of the fruit trees! We can't get much of a garden here because the summer is SO much shorter! AND it gets WAY cold at night almost all summer!

Canning Chicken?? Oh my! Now THAT is dedicated! :) Good job! I am totally impressed!

Just so you know, and anyone else interested in canning chicken, it's actually about 50 cents cheaper per pound the first time you can chicken (when you have to buy your jars) and it's about half the price when you do it again and can reuse your jars. But it does take some time so it's a toss up. But I think it tastes SO much better and fresher than canned chicken from the store!

That is cool about canning but the chicken looks so gross! I dont like touching it raw so that is very ambitious of you! and i love your new little girl! she is so cute!

Ok. I'm impressed with the canned chicken. If you have a natural disaster w/o power for your freezer, you and Wes will be living the high life with yummy chicken salad sandwiches on croissants (that you baked yourself.)

We went and picked strawberries today and saved a ton of money, and I'm making jam tonight! We ate my raspberry jam all year that I made last summer. It was very rewarding to spread jam on the kids' toast in the morning knowing that my labors provided them a healthy sugary spread all winter long!!!
